Description
a tasty green Thai curry made with Cod, peppers and courgette!
Ingredients
2 Wild Cod Fillets
1 Red Pepper
1 Courgette
1–2 tbsp Coconut Oil
3–4 tbsp Green Thai Curry paste (This will largely depend on your curry paste and your own taste)
400ml Coconut Milk
Instructions
1. Prepare the vegetables first. Chop the courgette into small chunks and slice the pepper into thin strips.
2. Heat a wok over a medium-high heat. Once hot add the oil. As it starts to smoke throw in the veggies and your green Thai curry paste. Let it cook together for a few minutes, until the veggies start to soften.
3. Throw in your cod fillets, you can keep them whole. As they cook use your spatula to break them up. After a few minutes pour in the coconut milk and combine thoroughly. Lower the heat and let it simmer for 5-10 minutes.
4. Once cooked serve over some boiled rice and optionally top with some fresh corriander leaves!
Notes
- Find a green Thai curry paste you like or make your own!
- Try different mild proteins! Chicken, Tofu or Chickpeas are all great.
- Mix up the veggies. Try and keep at least one sweet and one absorbent.
