Green Thai Curry – Some information!

This cod green Thai curry is my take on one of the most well know and well liked curries to come out of Thailand. With their famous ‘traffic light’ curries, Green is one of the most commonly seen. While each one is incredibly tasty. I think the green Thai curry is incredibly fresh with a good heat. I use my own green Thai curry paste to add an extra freshness. Ultimately though if you find a good pre-made one it will be just a tasty. It is a very quick and easy meal to make and doesn’t require much.

As the curry paste contains all the flavour once that is added, you just need some veggies and protein to fill out. I think white fish or chicken go particularly well. For those of you who are vegan or vegetarian, Tofu or Chickpeas would work to a similar effect. Nothing too overpowering so you can fully enjoy the flavour of the sauce.

Additions, changes and choices

You can make your own green Thai curry paste, which we have a guide on here. Although, I understand that not everyone has time for that. So any good quality pre-made paste will do. I suggest trying a few and finding one you like. This then makes this tasty and healthy dish, super quick to make.

As for protein, I have picked Cod for this example. I think any white fish would work well here. Something not to overpowering in flavour. Likewise, Chicken would work well if you want to use meat. For a non-meat variant, Tofu, Chickpeas or green lentils would make an excellent accompaniment to this dish.

Vegetables as always are really up to your personal choice. I would advise to have at least one sweet and one absorbing veggie. So sweet potato or carrot, could be used in place of the pepper for example. While aubergine or broccoli could be used instead of Courgette. Outside of that, try some different things. Mix it up each time and have some fun with it!

Description

a tasty green Thai curry made with Cod, peppers and courgette!


Ingredients

Units Scale

2 Wild Cod Fillets

1 Red Pepper

1 Courgette

12 tbsp Coconut Oil

34 tbsp Green Thai Curry paste (This will largely depend on your curry paste and your own taste)

400ml Coconut Milk


Instructions

1. Prepare the vegetables first. Chop the courgette into small chunks and slice the pepper into thin strips.

2. Heat a wok over a medium-high heat. Once hot add the oil.  As it starts to smoke throw in the veggies and your green Thai curry paste. Let it cook together for a few minutes, until the veggies start to soften.

3. Throw in your cod fillets, you can keep them whole. As they cook use your spatula to break them up. After a few minutes pour in the coconut milk and combine thoroughly. Lower the heat and let it simmer for 5-10 minutes.

4. Once cooked serve over some boiled rice and optionally top with some fresh corriander leaves!


Notes

  • Find a green Thai curry paste you like or make your own!
  • Try different mild proteins! Chicken, Tofu or Chickpeas are all great.
  • Mix up the veggies. Try and keep at least one sweet and one absorbent.
